I absolutely love this Coconut Chicken recipe. To be honest I eat it 3-4 times a week right now. Yes, I love it THAT much. It has a nice sweet taste and texture.
And it is so easy to make!
1 pound chicken breast ( I cut mine in half to make them thinner)
Frying pan heated with Olive Oil
Using two separate bowls , beat 2 eggs in one bowl and put the coconut flour in the other.
Dip the chicken in the egg then dredge it in the coconut flour and place in the frying pan.
I cover mine with tin-foil and cook on a low heat. I find that the coconut will burn when I cook it to fast.
Be sure to add small amounts of Olive Oil to the pan as the oil cooks off and turn the chicken to prevent sticking and burning.
Cook for approximately 30 min. and enjoy!
