Hey there! Happy day after hump day! I had every intention of getting this post up yesterday. Obviously that didn’t happen. ha!
The above picture was taken last spring/summerish and I am so wanting everything to be green. Maybe it will come faster if I really think hard about it!
I do not always make two dinners. Last night I did. I cooked for an hour and a half. It wasn’t fun, but boy was it delicious. Beef Stroganoff was on the menu and since I can not do dairy (the 8oz. of sour cream in the recipe) and I don’t like how soy makes me feel, I opted for this recipe by Danielle Walker; Against all Grain Cookbooks. If you haven’t heard of her pull out your phone right now and search her up on Instagram and follow her right away! She has some great recipes that are Gluten Dairy Soy…. let’s just say they are free of some stuff. She makes them tastes so amazing!
This is the finished product. It looks like oatmeal on the top. I promise it isn’t. The substitute she uses for the cream is a cashew and water + apple cider vinegar in the blender. *A little tip* If you can, use a food processor. I am thinking it will come out a bit creamier next time I make it. OH! Annnnnd… Add double the water to this part of the recipe. I definitely feel it comes out better.

I can’t eat corn. I know it’s sad. No Corn on the cob and my favorite… popcorn. But, once in a while I cheat and I have a confession. You see almost every Sunday night (and Friday if I am being completely honest) we sit down watch TV and eat something yummy. Doug without fail has popcorn every time and I usually make myself an açaí bowl. But this particular Sunday I couldn’t resist the smell coming out of that air popper. And I caved. Now, you may be asking why it is such a big deal. Well, it isn’t really, except for the fact that I react badly to it. We are talking heart palpitations, stomach ache and extreme bloat. Then to top it off I walk around in a fog for about 5-7 days. Yup! It is that bad. That was Sunday night and Monday I woke up and felt like I ate nails in my sleep. Enter Momzilla. So moody all day. Be careful if you get to close, I may bite your head off or shoot laser darts from my eyeballs. No lie. It got me to thinking. Is it the popcorn making me moody?
Complex Carbohydrates such as whole grains, corn oats and brown rice should have a calming affect on the mood. Simple carbs are high on the glycemic index, which means they are digested quickly and released into the bloodstream, resulting in a spike in both insulin and blood glucose. Examples of simple carbs include most breads (especially white), white rice, soda, candy, cookies, honey, syrup, carrots, which can result in anxiety, stress and mood swings. While corn is listed as a Complex Carb , I am thinking that my body processes this grain differently due to IBS and therefore has the opposite effect on my digestion. I am still researching this thought and will keep you posted on what I find out.
